Together, we’ll make potato gnocchi by hand and prepare the pesto in the old-fashioned way, using a mortar and pestle.
We’ll cook the pasta and enjoy it with the freshly made pesto, sharing a glass of Ligurian wine and ending on a sweet note with a little surprise.

Pansoti e Salsa di Noci
Discover one of Liguria’s most beloved dishes.
Together, we’ll prepare delicate fresh pasta filled with spinach and ricotta and make the traditional walnut sauce by hand in the mortar.

The Art of Fresh Pasta – A Ligurian Journey
Join me for an immersive culinary experience where you’ll master the art of handmade pasta.
In this hands-on workshop, you’ll create three distinct types of pasta: pansoti – a delicate filled pasta traditionally stuffed with a blend of wild herbs and ricotta and served with creamy walnut sauce; corzetti – stamped pasta discs bearing intricate Ligurian designs, paired with a savory fresh tomato and dried porcini mushroom sauce; and potato gnocchi, perfectly complemented by fragrant Ligurian pesto.
At the end, we’ll enjoy a tasting of all the dishes we’ve prepared together.

Coastal Seafood Delights
We’ll start with a chat about the menu for the day before diving straight into the cooking.
You’ll get hands-on experience preparing a starter and homemade stuffed pasta with seafood and we’ll also learn how to bake fish the Ligurian way, with black olives and pine nuts.
Finally, we’ll gather to savor all the dishes we’ve created together:

Sciamadda – Ligurian Street Food
Step into a true symbol of Genoese street food: the sciamadda, whose name in dialect literally means “fiammata” (flame burst).
These small, intimate spaces, often with few tables to share, were centered around an ancient wood-fired oven, always alight, where the local specialties were cooked: the classic farinata (chickpea tart), assorted fried fish, and the traditional torte verdi (vegetable pies).
Historically, sciamadde were the favorite lunch spots for workers, especially fishermen and dockers and were almost always located near the port. They were more than just eateries: they were gathering places, where people shared meals, stories and wine after long days of work.
During this hands-on session we’ll prepare and enjoy three seasonal specialties together, accompanied by a glass of local wine and a sweet final surprise.
